This week’s favorites

These past couple of weeks have been BANANAS!

First, I’ve had house guests for the last week and a half.  And now…it’s time to move!  So I thought I would just pop in real quick to share some of this week’s favorites with y’all.

Favorite eats:

I made SkinnyTaste’s Cilantro Lime Shrimp with a side salad that consisted of: spinach, fresh figs, chopped red onion, pistachios, chopped apple, chopped pear and topped with dijon mustard, apple cider vinegar and olive oil…YUMMMMM!

Favorite workout:

Because of aforementioned craziness, I’ve had to keep my workouts short and sweet.  So, this week my favorite was this tabata workout that I found via The Not Quite “It” Girls.  I did this quick little workout in between 2 x 15 minute sessions on the elliptical.

Lunch recipe, my ankle and more silly memes

Happy Friday ya’ll!!!!  I have been one busy little beaver these days so I thought I would just pop in and say hello real quick before my busy weekend commences.

This will be me in a couple of hours and I am PUMPED

ImageAnyway, last week I found a yummy lunch recipe from Kath Eats and I thought I would share!  The actual recipe is found here.  It’s a lemon caper chickpea salad and it was DELICIOUS!  It is super easy to make and quite filling.  The main ingredients include capers, chickpeas, tomatoes and spinach.  She also calls for feta cheese but I used goat cheese because I am not a fan of feta.  Here’s what the finished product looked like:

ImageIn other news, I finally made it into the orthopedic surgeon’s office and his news was good and bad.  He said that my hardware (from my ORIF surgery) is fine but that I have tendonitis in my ankle from the scar tissue.  It was good news because I don’t need surgery but bad news because there’s not much that can be done about it except perhaps physical therapy.  Waaah!  

I was especially annoyed because I had to wait an ENTIRE HOUR before I was seen!!!  What is up with these doctors who can’t keep their appointments?!?!?!?  If I was consistently late to meetings, I would be fired.  Anyway, at least there was an awesome view from my waiting room!

Guest post and a yummy recipe

Have you ever fisted a bald chicken?  Be honest.  I should probably introduce myself first.  This is Bryan (Rachel’s ultra talented loving husband) and Rach asked that i contribute to her blog post every once in a while.  Back to why there is a bald chicken on my fist.

Sunday night is a great time for me to display my culinary feats and also remind Rachel how lucky she is to have a husband who can cook.  Sunday’s dinner recipe was a whole roasted chicken.  Ultra healthy, super easy.  The best thing about this dish is that you can change the recipe every time you make it.  Rachel tells me too much garlic gives her gas, so I tend to leave that out.   But feel fee to alter some of the veggies depending on your personal bowel movements.

This is the before:

Ingredients: Whole Chicken, 1 lemon, rosemary, garlic, white onion, butter (optional), salt, carrots, and potatoes.  

Remove fist from chicken.  Cut the potatoes, carrots and throw them in the roasting pan.  Salt and pepper on top.  HOT sauce if you can handle it…

Cut the lemon in half and forcefully stuff the bird, throw in an onion as well (remove the giblets before stuffing your bird!).  Chop some garlic and melt some butter, combine in a bowl with rosemary.  Brush on the skin.  Add a generous amount of salt to the skin (this is where you get that bomb-ass skin).  Rub in the salt vigorously!  Caution: Under salt at your own risk!!  Please drink a glass of red wine throughout this process.

Bake at 425 until the bird reads 175 degrees.  Juices should run clear and will be soaked up by those delicious potatoes (fingerling, sweet, whatever works).  You should be on your 3rd glass of wine by now.

As you can see, we also served roasted brussels sprouts on the side.  I also usually whip together a avocado cilantro dressing to go with.  If Rachel lets me back on her blog, i will share that recipe next time.

Treadmill workout, total body circuit and my favorite salad

Guys, I am soooo happy about the long weekend.  My job has been kicking my butt lately with these crazy hours so an extra day off is ALWAYS welcome 🙂

This weekend I got in a couple of really sweet workouts and made a yummy yet easy dinner. SO…

I am going to move it along in chronological order so let’s start off with Friday.  I didn’t really feel like braving the cold so I made this balsamic onion, bacon and goat cheese pizza recipe that I found on Pinterest + my favorite salad [aside: For the pizza, I bought a pre-made wheat crust and used turkey bacon instead, it was still delicious!]

My favorite salad is so simple yet so delicious, I can honestly tell you that I eat this thing AT LEAST once a day.  To make it, all you need is: Arugula (or some other super green mix, spinach, bok choy, etc), goat cheese, dried cranberries, walnuts, liquid agave and olive oil.  Just toss all the ingredients in a bowl and ENJOY!  You’ll thank me in the morning.

Saturday morning got started off on the wrong foot, to say the least.  I was signed up to do my very first Bar Method class with my friend Leslie.  Well, for some reason, I thought the studio was a lot closer to my apartment so I wounded up full-on sprinting to the place.  WELL, I got there TWO WHOLE MINUTES late and they wouldn’t let me take the class!!!  OMG, to say I was pissed would be the understatement of the year.  So instead, I pouted walked my booty home and did this awesome treadmill workout instead:

Today was nothing special, I didn’t feel like doing much in terms of working out but I’ve been taking a lot of cheat days so I thought it best to drag myself to the gym.  I ended up doing 15 minutes on the elliptical + 10 minutes on the stair climber (the one that rotates) + this awesome circuit workout that I found on Peanut Butter Fingers <— If you’ve never been to her website, check it out ASAP, it’s awesome!  Oh yea, the workout!…

The workout only took about 20 minutes so I was on my way back to the couch in no time!

As for the rest of my day, I am going to fart around with my camera and take random pictures of Chicago like a total tourist.  Then tonight, I’m off to see Identity Thief and then to grab some dinner.

What I Ate Wednesday…

…But on Thursday.

I knew this week was going to be hectic with late nights at work.  So, I made sure I planned my meals carefully.  I made all my dinners the night before, to eat the next evening at work.  This allowed me to skip out on all that takeout (thank goodness!!!).

Here’s what is on tap for this week:

Monday: One of my favorites Skillet Sweet Potato, Sausage, and Spinach Hash

Tuesday: Shrimp Tacos, Yum!

Wednesday: Picadillo!

Thursday: Pesto Spaghetti Squash which you can find HERE

Friday: I will probably succumb to the takeout of my boss’ choosing (what? It’s Friday!!)

Anyway, here is a quick look at what I ate on Wednesday:

Breakfast: Toast with sugar free jelly and a banana (est. ~ 230 calories)

Lunch: Tunafish (with mustard and a dab of mayo) on an English muffin with pickles and lettuce (est ~ 350 calories)

Dinner: Picadillo (see above for details).  I personally chose ground turkey and it was still awesome.  My husband even liked it (wait…WHAT?!?!?).  I would have taken a picture of it but it looked kind of gross.  I can assure you, it was DELICIOUS!  According to the recipe, each serving is about 277 calories.

Snacks: Home made trail mix with cashews, raisins, almonds, pecans (est ~ 140 calories) + 4 strawberries (est ~ 25 calories).

And there you have it my friends!  What I ate on Wednesday!  The total was about 1,022 calories.  I probably ate a little more because I don’t think I only ate one serving of the picadillo (do you blame me?!?!?!).

Gainesville, Gators and Playing Catch-up

Boy have I been busy!!!  This past weekend I went to Gainesville for the LSU/UF game and since I’ve come home, it’s been nothing but non-stop!

I’ll start from the beginning…

The night before I left for Gainesville I made this delicious recipe that I found on the Carrots N Cake blog:

Then it was off to Gainesville!  I flew into Orlando and had to drive what is supposed to be 1.5 hours to Gainesville.  Since I live in Chicago, I don’t have a car and so naturally, the first time I get behind the wheel in 7 months, it is pouring down rain and there is an 8 car pile-up.  We sat in the same spot for 2 hours…SUPER!

By the time we got to Gainesville, it was about 8:00 PM so we headed to a bar and met up with my sister-in-law (left), my friend Genell (middle) and my brother-in-law (not pictured).  It was great to see them!

The next day was game day!!! Woo hoo!  My step-brother met up with me right before I went into the game.  Our seats were awesome (in the shade) and we won!!!  GO GATORS!

Overall, it was a great weekend BUT, I ate like crap and drank way too much.

To make it worse, work was a mad-house once I came back and I had to stay until 10:00 PM last night!  This meant no working out.  I tried to redeem myself by waking up early this morning to get in a quick run but I was so tired from my long day yesterday that I didn’t make it.

But today will be my catch-up day.  After work, I plan on doing some laundry and running for about 30 minutes + 15 minutes on the elliptical + core strength training.  I’ve got to catch back up after a long weekend of going all willy-nilly!
