Greetings! This weekend was AMAZING (minus the awful weather). As I said in my last post, my wonderful friend, Rachelle and her husband came to Chicago this weekend so I was hanging out with them and it was AWESOME! I plan on doing a separate post about my past weekend because it was one I will never forget.
I have been pretty good about taking pictures of some of my recent eats and I thought I would share them with y’all.
So here goes…
Favorite breakfast of the week: green smoothie with avocado toast on the side
A couple of my lunches included:
Cucumber and tomato salad in a carb friendly wrap
Salmon and pineapple skewers (well, they were on skewers but I failed as a human being today and they completely fell apart) with chilled roasted brussels sprouts on the side.
I’ve been eating carrots and cottage cheese with fruit every.single.day this past two weeks. What can I say, I love the stuff!
CONFESSION: I’ve been really into making bread every week. I think it’s because I am in “nesting” mode where I want to be Martha Stewart when I grow up. Last week was cheddar chive cheese bread and this week was Onion cheese bread (I think someone (ahem, me) likes cheese). I don’ think my husband is complaining 😉
Anyone been consistently snacking on something healthy and delicious?!?! Please share because I NEED to get out of my snacking rut!
I haven’t posted on here and a while! I guess I’ve just felt like life has gotten the better of me these days.
Anyway, last Sunday, we went to our friends house for the big SUPER BOWL. It was a typical gathering filled with lots of food, beer and JENGA!!!
I ended up bringing this wonderfully (and healthy) delicious Hot and Spicy Buffalo Shrimp Dip. It was a big hit!
Anyway, back to the Jenga…In case you were wondering, we (naturally) managed to turn Jenga into a drinking game. You see, each block has instructions to either drink or do something else silly. Exhibit A:
Leslie pulled the card that required her to keep her head on the table AND have her next turn skipped…tough luck Leslie.

In terms of my workouts, I haven’t really been feeling like myself so I haven’t doing anything special. Mostly just running, the elliptical, spinning classes and weights. I’ve noticed that I do a lot better when I wake up early and get going in the morning so that’s what I’m going to strive for this week.
I have been doing pretty good with eating healthy, low calorie and yummy snacks so I thought I would share some of my favorites…
Cottage cheese with sugar free jelly mixed in
Carrots dipped in hummus
Greek yogurt with blueberries (sometimes I also mix in some granola)
Broccoli with veggie dip
Banana and sunbutter
