Treadmill workout, total body circuit and my favorite salad

Guys, I am soooo happy about the long weekend.  My job has been kicking my butt lately with these crazy hours so an extra day off is ALWAYS welcome 🙂

This weekend I got in a couple of really sweet workouts and made a yummy yet easy dinner. SO…

I am going to move it along in chronological order so let’s start off with Friday.  I didn’t really feel like braving the cold so I made this balsamic onion, bacon and goat cheese pizza recipe that I found on Pinterest + my favorite salad [aside: For the pizza, I bought a pre-made wheat crust and used turkey bacon instead, it was still delicious!]


My favorite salad is so simple yet so delicious, I can honestly tell you that I eat this thing AT LEAST once a day.  To make it, all you need is: Arugula (or some other super green mix, spinach, bok choy, etc), goat cheese, dried cranberries, walnuts, liquid agave and olive oil.  Just toss all the ingredients in a bowl and ENJOY!  You’ll thank me in the morning.

Saturday morning got started off on the wrong foot, to say the least.  I was signed up to do my very first Bar Method class with my friend Leslie.  Well, for some reason, I thought the studio was a lot closer to my apartment so I wounded up full-on sprinting to the place.  WELL, I got there TWO WHOLE MINUTES late and they wouldn’t let me take the class!!!  OMG, to say I was pissed would be the understatement of the year.  So instead, I pouted walked my booty home and did this awesome treadmill workout instead:

Guys, this thing kicked ASS (for me, anyway)!

Today was nothing special, I didn’t feel like doing much in terms of working out but I’ve been taking a lot of cheat days so I thought it best to drag myself to the gym.  I ended up doing 15 minutes on the elliptical + 10 minutes on the stair climber (the one that rotates) + this awesome circuit workout that I found on Peanut Butter Fingers <— If you’ve never been to her website, check it out ASAP, it’s awesome!  Oh yea, the workout!…



The workout only took about 20 minutes so I was on my way back to the couch in no time!

As for the rest of my day, I am going to fart around with my camera and take random pictures of Chicago like a total tourist.  Then tonight, I’m off to see Identity Thief and then to grab some dinner.

Mini-goals for the week

Hello!  How are you?  I hope your new year is off to a fabulous start 🙂

Mine has been a little bit rough as I’ve completely somewhat fallen off the wagon in terms of eating right and exercising.  I blame it on all the traveling!

Anyway, this week is my week to get back to it!  So, here is a flavor for the workouts/meals that I’ve got planned for the week:


Monday: I ran 4 miles with varying inclines and speeds, it took me a little over 45 minutes plus abs

Tuesday: I did the elliptical with varying resistances for 30 minutes plus this stability ball workout <– I wasn’t wild about it but it did the trick

Wednesday: Run for 30 minutes in the morning; upper body strength training in the evening

Thursday: Spinning class

Friday: Off

Saturday: 5 mile run

Sunday: Yoga


Monday: My husband made shrimp and grits and I made a salad

Tuesday: Loaded sweet potatoes (avocado, red onion, turkey bacon, greek yogurt, salsa)

Wednesday: Turkey meatballs plus salad

Thursday: Slow Cooker Chicken Black Bean Tacos that I found on (OMG it is SOOOOO good)

Friday: Out

Saturday: Out

*Lunch will be either salad, open faced sammie or leftovers, hooray!

Remember how I said I blame my falling off the wagon on traveling?  Well, here are a couple photos from a couple of my adventures…

The weekend after new years, I went to NYC to celebrate one of my best friend’s marriage (she had a small ceremony with family only) and the party had a photo booth…pure GENIUS!

THEN, this past weekend I went skiing in northern Michigan.  There was tons of snow and our place was awesome.  The only crappy thing was that on the second day, it was BRUTALLY cold, yikes!

Sweet circuit, overnight oats & photo dump

I did this circuit a bit ago and I’ve been meaning to share it because it was GOOD:

ImageIf you are new to the blogging community (like me), you will be in awe of overnight oats.  They are so easy and delicious.  Simply mix up equal parts of rolled oats, greet yogurt and almond milk then add half of a banana.  The next morning, it is ready for unlimited toppings (I prefer sunbutter and blueberries)!!!  Here’s a visual:

ImageWith the holidays, I haven’t really had time to blog or really even workout for that matter.

For Christmas, I went to south Florida to visit my family and friends.  There was a lot of eating and drinking involved and I only went running a couple of times #sobad.  But this week I am back on track!  I must admit, it is quite annoying to have so many people suddenly making a cameo at the gym come January (new year’s resolutions?), but I digress.

I usually don’t make New Year’s resolutions because to me, if you need to make a change make it NOW.  With that said, I totally respect people who do the whole resolution thing.  Hey, whatever gets you motivated is good with me 🙂

Weekly planning, early Christmas and SHOPPING

I am trying diligently to make sure I plan out my workouts and meals for each week.  I’m usually pretty good about planning my dinners, but not so much with lunch (I usually try to make enough dinner to have leftovers for lunch the next day).

This week’s planned (completed) workouts look like this:


This week’s dinners are (were) as follows:

Monday – My husband made some chicken stew, not sure how he made it, but it was so yum

Tuesday – I made this awesome sausage & leek casserole but I used a lot of lower calorie options as substitutes (turkey sausage, wheat bread, egg whites, low fat cheese, etc.).  Even with the substitutes, it was DELICIOUS.

Wednesday – Steak with Brussels sprouts, salad and black beans

Thursday – Stuffed peppers (I’m just going to throw together whatever we have lying around but there are tons of healthy options out there).

Friday – Pizza + salad (we have friends coming over to do a secret Santa gift exchange so we opted to make it easy and order pizza but I’ll likely have mostly salad)

Saturday – Out to dinner

Sunday –TBD


Christmas came early this year!  And do you know why?…Because my husband is so NOT smooth.  He ordered my gift using MY Amazon account so OF COURSE, I get an email right away saying that my order is confirmed.  I knew instantly what happened.  It’s cool, I LOVED it (he also got me a Kindle, woo hoo!!)!!!  I can’t wait to run some long distances outdoors!


If you live in the Chicago area, you probably know a thing or two about TBOX (Twelve Bars of Xmas).  It’s a pub crawl where people dress up and everyone usually ends up quite drunk.  My friend Leslie’s husband was planning on going with my husband but she and I decided that binge drinking all day was not in the cards for us so we went shopping at this special event in Merchandise Mart instead.  Some cool things we saw along the way (magnet board for the office, wine rack & a chalkboard placemat for kids).

Then after our little champagne extravaganza, we met up with our husbands for some delicious Mexican fare.  Here is my hubby sporting his ugly sweater and santa hat, so festive!

Weekend Rewind + This Week’s Goals

Saturday night we were having some people over to watch the Gator football game so I knew it was going to be a busy day! 

My original plan was to run outside for about 50 minutes or so but the weather was not cooperating.  It doesn’t look like it in this picture but it was quite chilly and rainy here in Chicago ALL WEEKEND.

I am not a big fan of doing long runs on the treadmill so instead of running for 50 minutes on the treadmill, I did 35 on the TM in my upstairs gym and then I tried out one of those “Insanity” workouts; it was a pretty decent workout!  I might actually invest in a couple of the videos 🙂

After working out, I hit up the grocery store, got ready and spent the rest of the afternoon in the kitchen.  The gals that came over are vegetarian and the guys, not…so I was sure to make an assortment of different types of food.  The menu was as follows:

Baked eggplant parmesan


Veggie pizza

Pepperoni pizza

Guacamole dip and hummus with veggies & chips (pictured below)


I was a total loser and only took one picture of the food, I guess I got all caught up in the act of cooking!  I thought the night was a success with there being plenty of food (with somewhat healthy options), great friends, and an awesome game to top it off!!!  I know you guys are very concerned so yes, yes the Gators did win (and are now ranked #3 woo hoo)!


I suck at taking pictures so even though this one is all blurry/grainy, I am proud of myself for remembering to take it!

This week has gotten off to a shaky start with me having to work late yesterday so here is a snapshot of this week’s goals:

Monday: Run for 35, bike for 15 (check!)

Tuesday: 6 rounds of the following: 1/2 mile run, 10 push-ups, 20 squats, 30 sit-ups

Wednesday: 40-50 minute run in the morning

Thursday: Strength training

Friday: off

Saturday: TBD

Sunday: Elliptical for 30 minutes, body works + abs class

Hopefully my work schedule doesn’t get in the way!!!

What’s the definition of insanity?

To do the same thing over and over and expect a different result.

SO, I decided to switch things up for my last 2 workouts.

Yesterday, my friend Leslie sent me a couple of treadmill workouts to try.  Well, I tried this one:

Let me tell you, that workout was a doosy!  I couldn’t even do the whole thing, yikes!

Today’s work out consisted of me looking like a crazy person on the elliptical.  I held 5 lbs weights in each hand and just flailed my arms around (bicep curls, shoulder presses, etc.) for 30 minutes on that thing.  Awesome workout, I suggest you try it 🙂

After doing the elliptical and working on my core, I decided to take a trip to the magical Target.  I ended up finding this sports bra for only $12.99, score!
